Fiesta Mexican Cornbread

Meat Mixture:

In a large skillet heat up 1/2 tsp butter and 1/2 tsp oil

Add 1 med chopped onion

1 orange and 1 red bell pepper chopped

3 cloves chopped garlic

Simmer until onions are translucent

Add 1 lb. lean ground beef

Simmer together and add

2 Tbsp Cumin

1 Tbsp Chili Powder

1/4 tsp Cayenne Pepper

1 Medium tomato cubed

Brown, salt and pepper to taste and set aside

Cornbread

Preheat oven to 400 degrees (grease cast iron skillet and heat in oven)

Mix together:

1-cup cornmeal

3/4 cup flour

1 and 1/2 tsps baking powder

1/2 tsp baking soda

1/4 tsp salt

In separate bowl mix:

6 tsp melted butter

2 large eggs

1 and 1/2 cups buttermilk

Combine wet and dry ingredients and stir slightly 15 seconds

Pour half of the mixture into the hot skillet

layer 2 cups sharp cheddar

Add meat mixture

Pour other half of cornbread mix on top

Layer another 2 cups sharp cheddar

You can top with jalapenos if desired

Put skillet in oven and bake for 20 to 25 minutes until top is golden brown

Remove from oven, let cool a bit slice like pie and serve.

You can top with fresh salsa and sour cream for that extra kick.
