Almond Biscotti


Mix together and cream well:

1 pound Margarine

4 cups Sugar

6 Eggs

In separate bowl Mix together:

8 cups Flour

1 Tbsp Baking Powder

3 oz toasted Almonds (1oz toasted almonds on top)

2 Tbsp Almond Extract

Add 2oz of Cocoa for Chocolate Biscotti.

Add all together and mix well

 Turn out onto a floured surface and roll into a log shape, then cut into 6 equal portions.

Roll each into another log. Place on greased cookie sheet, pat down with your hands to about the width of your hand. Brush with milk and sprinkle with sliced almonds.

Cook at 350 until golden brown in top. Cool completely then cut on bias. Enjoy!
