Fall is upon us and the cool weather season has begun! Time to get your fireplaces cleaned out and your Fall menu started off right with these two recipes from our kitchen.
Cheeseburger Soup
2.5 lbs. ground beef
1 onion diced
2 Tbsp. dill
Flour
2 cups pickle juice
4 cups chicken stock
1 cup heavy cream
1 cup chopped pickles
4 oz Havarti with dill cheese grated

Sauté onions and add ground beef
Add dill
Add enough flour to pick up the cooked ground beef
Add pickle juice and chicken stock
Cook until thickens
add heavy cream & chopped pickles
Remove from heat and add grated cheese
Check for salt and pepper

And for desert,
Cream Cheese Stuffed Brownies
2 quarts sugar
24 eggs
6 cups flour
4 tsp. baking powder
2 tsp. salt
4 tsp. vanilla extract
1 LB dark chocolate
2 lbs. Semi –sweet chocolate
2 lbs. Butter

Melt butter and chocolate over a double boiler until smooth
Pour into mixing bowl
Add eggs and mix 5 min
Add sugar and mix until no more granular of sugar
Folds in dry ingredients do not over mix.
2lbs. Of cream cheese
1 lb. of powder sugar
Cream all until smooth

Pour ½ of brownie mix into sheet pan squeeze cream cheese mixture in lines across pan ¼ inch apart until completely lined out.
Pour the remaining brownie mix on top and bake for 35 min until inserted knife comes out clean.
If you are making walnut brownies then leave out the cream cheese and just add nuts.
