Ingredients:
Whisk together:
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp baking powder
4 tsp pumpkin spice
½ tsp salt
In separate bowl mix together:
2 eggs room temperature
¾ cup brown sugar
Add:
½ cup pumpkin puree
2 tsp maple syrup
¼ cup vegetable or coconut oil
Directions:
Preheat over to 350 degrees and position rack in center
Add liquid ingredients to the dry ingredients, stir with wooden spoon until incorporated
Use a large spoon to scoop out dough and place on parchment lined cookie sheet
Add another scoop adjacent to the other and keep adding to each until two logs are formed. With damp fingers shape into log shapes
Bake approximately 30 minutes or until golden brown in color and firm to the touch. Cool 10 minutes slice and ENJOY!
So good with melted butter.
